1/2cuprolled oats
1/4cupunsweetened applesauce
1tablespoonhoney
1/2teaspoonvanilla
1/4teaspoonground cinnamon
1/4teaspoonapple pie spice
1/4 to 1/2cupwater
Instructions
Preheat oven to 400 degrees.
Rinse, core, and slightly hollow the apples removing seeds creating a well for the filling while leaving the bottom intact.
In a medium bowl, mix oatmeal, applesauce, honey, vanilla, and the spices together. If desired, add chopped walnuts and/or dried fruit.
Fill each hollowed apple with the oatmeal mixture; place apples in a baking dish along with 1/4 to 1/2 cup of water.
Bake for 30-40 minutes or until the sides of the apples are soft and easily pierced with a fork. Remove from the oven and drizzle any juice from the apples in the water over each apple.
