carrots,
peeled or unpeeled, halved and halved again lengthwise

tablespoon
olive oil
1
tablespoon
honey
½
teaspoon
Kosher salt
½
teaspoon
pepper
Optional – Parsley for garnish
Instructions
Preheat oven to 400 degrees F
Cut off stems of carrots; Peel or leave carrots unpeeled; cut the carrots in half and then cut each half in half lengthwise.
Put cut carrots into a bowl; add in olive oil, honey, salt and pepper – toss thoroughly to coat all the carrots.
Spread carrots on a baking sheet so they are in a single layer and not stacked or touching each other.
Bake for 30 minutes.
Garnish with parsley if desired and serve immediately.
