Ingredients

canola oil

boneless, skinless, chicken breasts or tenders,
cut into ¾ inch pieces
2-3
large carrots,
cut into ¼ inch slices (2 cups)

medium zucchini,
cut into ¼ inch slices (2 cups)
½
teaspoon
salt
8
medium green onions,
sliced (1/2 cup)
1-2
cups
shredded sharp cheddar cheese
Instructions
Heat 12-inch nonstick skillet over medium-high heat. Add oil; rotate skillet to coat bottom.
Add chicken and minced garlic; stir-fry 4 to 5 minutes or until no longer pink in center.
Remove from skillet.
Add carrots, zucchini and salt to skillet; stir-fry 4 to 5 minutes or until crisp-tender. Add chicken back to skillet stirring together with veggies.
Sprinkle with cheese and green onions. Cover skillet until cheese is melted.
