Almond & Lemon Crusted Fish Recipe

almond-crusted-fishTry out this super simple, tasty fish recipe the whole family will enjoy.  It looks elegant but the best part is the hint of lemon throughout with the crunchiness of crushed almonds.  Recipe courtesy of EatingWell Magazine.

Almond & Lemon Crusted Fish

Ingredients:

1 ¼ pounds cod or halibut, cut into four portions

Zest of one lemon

½ cup sliced almonds, coarsely chopped or crushed by hand

1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill

1 tablespoon extra-virgin olive oil

½ teaspoon kosher salt

4 teaspoons Dijon mustard

Freshly ground pepper to taste

Instructions:

  1. Preheat oven to 400 degrees.  Line a rimmed baking sheet with aluminum foil and apply cooking spray.
  2. Combine lemon zest, almonds, dill, olive oil, salt and pepper in a small bowl.  
  3. Place fish on the prepared baking sheet and spread each portion with 1 teaspoon mustard.
  4. Divide the almond mixture among the portions, pressing it onto the mustard.
  5. Bake the fish until opaque in the center, about 7 to 9 minutes or longer depending on thickness.
